Breakfast

FRESH:

Farm eggs with pesto sautéed kale, shiitakes and cherry tomatoes, local sourdough bread, avocado, hot honey, flaky salt, and pepitas (option to add local thick sliced bacon)

 

COZY:

Oatmeal bowl with GF rolled oats, wild blueberries, VT maple syrup, fresh ground almond butter, chia seeds, toasted coconut, vanilla and cinnamon (vegan, GF)

Your choice of FRESH or COZY

Lunch

FRESH:

Grilled chicken breast with quinoa, fresh lettuce, roasted and spiced cauliflower, tzatziki sauce with Mother Culture local yogurt, Pure Luck feta cheese, homemade harissa hummus, grilled naan bread, fresh herbs and edible flowers

(substitute crispy tofu, culina coconut yogurt, and no cheese for vegan) (option to skip naan, extra quinoa for GF)

COZY:

Coconut lemongrass curry chicken soup with cardamon and lime leaves, sweet read peppers, mushrooms, scallion, cilantro and grilled baguette 

(dairy free, can be GF without baguette, can substitute brown rise for GF grain)

Your choice of FRESH or COZY

Dinner

FRESH:

Wild caught coriander shrimp and artichoke skewers over saffron risotto with grilled asparagus, seared zucchini and freshly grated nutmeg and pecorino cheese

(Substitute spice chickpeas for vegan, no cheese)

 

COZY:

Rosemary butter cast-iron local strip steak with celery root puree, roasted and spiced butternut squash, charred broccolini, fried sage leaves and burnt rosemary
